Stopping the Number One Killer

And Why Our 44 Year Old Son Died

      On May 11, 2004, our 44 year old son Mark, while jogging, had a heart attack and died. He did not have high cholesterol. His diet was low in saturated fats. he was not sedentary, he did not have diabetes, or high blood pressure,  and he was never overweight.

      Following are the things that must be done to stop heart disease, the number one killer; and what the latest research tells us caused the death of our son. 

 

1. Engage in regular exercise and do not smoke cigarettes.

      If you want to prevent heart disease, it is imperative that you exercise regularly and not smoke cigarettes.  From 1993 to 2003 the death rate from coronary heart disease declined 26.5 percent.  The fact that fewer people are smoking and more people are exercising is the major reason there are fewer heart attacks. (Our son did not use tobacco, tea, coffee, or alcohol. He was an excellent athlete, and he exercised regularly most of his life.)

2.  Avoid unnecessary X-rays

      One of the world’s leading scientists, John Gofman, reports that medical X-rays cause micro tumors on the inside of the arteries on which cholesterol plaques form to heal the tumor. The plaques narrow the artery and this can then lead to an infarction (blockage) or heart attack. In one of the largest and most comprehensive medical studies ever done, Dr. Gofman estimates that medical X-rays are a necessary co-actor causing 75-90% of breast cancer, 50% of all other cancers, and 60% of all coronary artery disease. 3. Do not drink chlorinated water and avoid showering in chlorinated water.

      Chlorine is added to our drinking water to eliminate water born diseases, but we don’t have to drink chlorinated water. If you let the water sit for a minimum of two hours all of the chlorine will evaporate. You can also eliminate the chlorine in your drinking water or in your shower by running it through a carbon filter. (The research and reasons why chlorine causes heart disease will be given in my book.) Avoiding chlorine may be more important than avoiding saturated fat.  (Our son grew up drinking and showering in chlorinated water. He also did a lot of swimming in chlorinated pools.)

 

4. Unless you are anemic, do not take any vitamins containing iron or eat any food fortified with iron .

      A high level of iron in the blood may be a better indicator of heart disease than high cholesterol.  This is the reason why women, because of the loss of blood and iron through menses, have a lower incidence of heart disease than men.

      Do not give your babies or children formula with iron, vitamins containing iron, or food fortified with iron, and do not consume them yourself. This is important also for older women, because after menopause, their incidence of heart disease quickly catches up with that of men. It is also a good reason for such women and all men to donateblood regularly. (Our son was given vitamins with iron and food fortified with iron from the time he was born.)

5.  Do not drink homogenized milk.   Homogenization makes the butterfat molecules so small that they can pass through intestinal walls. This I believe fills the blood stream full of artery clogging fats.  Dr. Kurt A. Oster's studies from the 1960s to the 1980s suggest that homogenized milk is a major factor in plaque formation, causing heart disease. His view of the mechanism of how homogenized milk caused heart disease may not have been totally correct, but the theory is still very credible. There are other good reasons to avoid pasteurized homogenized milk  A newborn calf separated from its mother and fed a diet of only pasteurized milk will live only about six weeks. (Our son grew up drinking only homogenized milk)

 

6.   Do not use salt that “Pours when it rains.

      Sixty years ago in Utah, cows were given a new kind of salt with anti-caking agents in it. (This salt would “pour when it rains.”) Their ankles swelled up and they died with congestive heart failure. Switching back to natural rock salt stopped the cow deaths.

      More than 42,000 people in the U.S. die each year from congestive heart failure. Another 219,000 deaths are related to congestive heart failure. Many are on salt restrictive diets and virtually all of them use the kind of salt that killed the cows.

      If you are not on a salt restrictive diet, changing to salt from the health food store that absorbs moisture and does not pour when rains, could save your life.  We have personally seen it reduce edema and lower blood pressure; a major risk factor for heart disease and stroke. (Mark grew up eating the wrong kind of salt.)

7.    Do not use margarine or shortening or eat food containing hydrogenated or
partially hydrogenated vegetable oil.

      This is the most important thing you can do to prevent heart disease. The latest research estimates that this could prevent between 72,000 and 228,000 heart attacks each year.

The information is from the Harvard Medical School, New England Journal of Medicine, and from four studies including the Nurses’ Health Study of more than 120,000 nurses that began in 1976. It reveals a shocking 180 degree change in the position of modern medicine regarding fats in the diet.

You can stake you life on this research because of the large numbers involved and because it continued for 30 years. The research was not done to sell a drug. There was no ulterior motive and no vested interests.

      What the research revealed is: “Just 5 grams of trans fatty acids (from margarine, vegetable shortening, hydrogenated or partially hydrogenated vegetable oil) per day increases the risk of heart disease by 25%.” (Two servings of margarine weigh morethan 5 grams.)

      A report from the Institute of Medicine has concluded “there is no safe level of trans fats in the diet.”

      The Harvard School of Public Health reports: “Trans fats are even worse for cholesterol levels than saturated fats because they raise bad LDL and lower good HDL. While you should limit your intake of saturated fats, it is important to completely eliminate trans fats from partially hydrogenated oils from your diet….Ounce for ounce, trans fats are far worse than saturated fats when it comes to heart disease.”

      So no one will misunderstand the above statement, I will restate it: Margarine and vegetable shortening are far worse than butter and lard when it comes to heart disease.

      The New England Journal of Medicine reports: “On a per-calorie basis, trans fats appear to increase coronary heart disease risk more than any other micro-nutrient, conferring a substantially increased risk at levels as low as 1% to 3% of total energy intake. In a meta-analysis of four prospective cohort studies of nearly 140,000 participants, a 2% increase in energy intake from trans fats was linked to a 23% increase in the incidence of coronary heart disease.

      “On the basis of the reported relationship between trans fat intake and coronary heart disease 10% to 19% of coronary heart disease events in the U.S. could be averted by reducing the intake of trans fats. Given the 1.2 million annual myocardial infarctions and deaths from coronary heart disease in the U.S., near-elimination of trans fats might avert between 72,000 (6%) and 228,000 (19%) of coronary heart disease events each year.”

      This makes stopping the war in Iraq with 2,000 plus total deaths look like a blip on the radar screen.

      Even the current legislation requiring the listing of trans fats on all products may not help.  It will deceive most people. According to the FDA, a product claiming to have zero trans fat can actually contain up to a half gram. (Canada set a different standard of zero as under 0.2 grams.) So you must read the ingredient list for "partially hydrogenated vegetable oil" and look for another product, if it's something you eat regularly.

      Food and peanut butter companies are using the above ruling to get away with the same thing that killed countless thousands. They now advertise “O trans fats per serving, as always.” Per serving allows up to a half gram of trans fats.  Almost all food made with hydrogenated vegetable oil has always had less than a half gram per serving. Nothing has changed. The “as always” peanut butter, plus eating margarine and foods made with hydrogenated oils, is what the research tells us kills more than 72,000 people each year.

            To prevent heart disease, we must completely eliminate all trans fats from the diet.  (We raised our son on 100% whole-wheat “health bread” made with “pure vegetable shortening.” It said on the wrapper “The Whiter the Bread the Sooner Your Dead.”  Now we know the “health bread” made with vegetable shortening is one of the reasons he died! What made matters worse; he put hydrogenated peanut butter on nearly every piece of bread he ate.

            Thinking it was healthier, we added to the problem by using margarine and shortening. All of the prepared foods we bought made matters still worse because they were made with hydrogenated or partially hydrogenated vegetable oil - even ice cream.)

 

8.   Eggs to prevent heart disease

            One more factor could have contributed to the death of our son: He did not like eggs. A report from the Harvard School of public health states: “While it's true that egg yolks have a lot of cholesterol--and, therefore may slightly affect blood cholesterol levels--eggs also contain nutrients that may help lower the risk for heart disease, including protein, vitamins B12 and D, riboflavin, and folate.”

            Imagine that, the prospect that eggs may lower the risk of heart disease instead of avoiding eggs as recommended for so many years by the American Heart Association (another 180 degree change).

      When you put together all of the pieces, the shocking possibility logically follows: Butter, eggs, and cheese might have saved Mark’s life.

       I look forward to the day when I can find a restaurant or a bakery that advertises, “This establishment uses zero trans fat.  We cook with saturated fat and recommend butter instead of margarine for your heart health.”  

      Just one dietary change, totally avoiding trans fatty acids, could prevent from 72,000 to 228,000 heart attacks each year. If you add to that the number of deaths from pain medications, 26,000 to 55,000 from Vioxx, plus what could be an equal number of deaths from other pain meds, then you know why I feel deeply about preventing heart attacks and pain without drugs.

Addendum:

                  Does cholesterol that collects as “plaques” on the inside of arteries lead to heart attacks? The answer is an unqualified YES. Because everyone has cholesterol in their blood, no matter how much or how little cholesterol they consume, this can happen to anyone. The liver will produce cholesterol, no matter how little we eat, just to sustain life. You are dead without it.

         The question is, “Why do cholesterol plaques form on the inside of arteries?” They do so to heal injuries from medical X-rays, injury from chronic inflammation, and injury from too much homocysteine. The answer is to prevent the injury or inflammation, not reduce the cholesterol the liver produces to heal the injury or inflammation.
